Happy May - the wonderful month of summer’s beginning and warm weather festivities. It’s also my favorite season, not least because of both my sister and I’s birthdays.
I’m proud to share that I finished my first 5K this past Sunday. The decision to sign up is just as spectacularly predictable and scheduled as I am as a person - four days before the actual event and three weeks since my most recent run. Nevertheless, I am happy with the result - namely zero walking and reasonable pace. My next mini goal is a 10K happening in the Fall.
Remote work / Office chair potatoes reunite - please hit me up if you are also (hyperventilating and flailing your arms) running, needing to find a hobby to clear your mind or check out of work and want an accountability buddy.
What I Have Been Cooking:
Chia Seed Pudding
Mashed raspberry layer in the bottom (raspberries + honey), darker pink chia layer (chia pudding + raspberry + honey), white chia pudding and finally peanut butter on top.
I followed the ratio of 1 tbsp chia with 1/4 c milk and 1 tsp honey. Adjust amount of chia you want to get the desired volume.
I actually bought this Okonomi sauce and bonito flakes (not shown) at H-Mart. Austin’s H-mart is huuuuge and makes me so happy. This has cake flour, finely chopped cabbage, chicken breast (can use bacon, pork belly or shrimp, etc.) water and one egg.
Korean Soup Stew
I followed instructions from the back of this soup flavor. Soup has egg tofu, leftover chicken breast from Molly Baz’s brothy chicken rice recipe, bok choy and cabbage.
Sweet.. Ooey.. Honey-Like Baked Japanese Sweet Potatoes
Wash + scrub until clean and bake at 375F for 50 mins. Bigger potatoes might need longer baking time. It’s sweet and creamy.

Books & Notes On The Go:
After three months of Texas hibernation mode, I will finally *drumroll……* be travelling again. I will be traversing America in May, first to attend my own graduation ceremony and seeing college friends, then come two other fun destinations (will be revealed soon).
Spending 90+ days in (relative) isolation and sitting with my own thoughts, I came to face ugly fears and insecurity: about my career, money, relationships, everything. Would not recommend for anyone but at the end of the day, I find some good coping mechanisms and I hope I’m emerging out of a darker time.
Each of us at one point will circle back to the trite saying “Happiness is a journey, not a destination.” I’m learning it the hard way but I’m glad that I’m picking it up at 22 and not 60.
